I like most everything.  Except for sports games.  I haven't enjoyed a sports game since NHL '94 on the Sega Genesis.  But I flat-out LOVED that game.

Fighting games/Third person brawlers (basically anything that's combo-heavy)

Nintendo franchises (though I like the Paper Mario series)

Any game that has more than a few minutes worth of cinematics

Team sports games (I enjoyed earlier iterations of SSX and Tony Hawk)

I like most strategy games, but the Heroes of Might & Magic / King's Bounty model of wandering around a big map to recruit different units and fight monsters just doesn't do it for me.  There seems to be so much trial and error in determining which units are best suited to fight specific enemies.  Some people are really good at internalizing all the different stats and abilities so the right tactics come more naturally to them, but I just sort of gloss over and wander off to play something else.

My interest in fighting games has also waned over the years.  I played tons of Soul Calibur 1 and 2 when they were hot, but I skipped the third one altogether and the fourth, which I own, remains completely unplayed.  Wrestling games are especially unappealing.  I have one friend who really enjoys them, and I honestly don't think I've ever pulled off a single intentional move.

Military-themed shooters escape me, too.  I've tried the first Modern Warfare, Bad Company and Ghost Recon: Advance Warrior games pretty extensively, four or five hours each, and although they're clearly well-designed and good looking games, the experience is wholly uncompelling for me.  Maybe its the "realism" of the combat model -- since the weapons are so lethal, I often feel like I'm playing through a reflex-based first-person puzzle to figure out the sequence of moves the developer intends me to take in order to survive.  Other games where the rules are relaxed a bit (F.E.A.R., Crysis, FarCry 2) are a lot more enjoyable to me.

I also used to love twitchy first-person shooters and now find most of them drab and uninspiring.  The last shooter I enjoyed was Fallout 3, and that's just because I paused it during every battle and used VATS.

Platformers and Jumping puzzles in general.  No, I CANNOT tell where the edge of the block is to hit the jump button in a FPS and I SWEAR I was going to jump on the heard of the stupid skeleton turle.

Not a new thing for me, I can't remember a jumping game I liked since 1978.

I don't really hate genres, just certain things that certain games within those genres do.
Such as Stealth games. I love stealth games, but so far, only the Thief games got it right. Every other stealth game I've tried has been far too linear.
QTEs in most games. But Heavy Rain got it right, allowing for failure.
MMOs. Can't say I hate the genre, since I've never played online games, and thus haven't given one a chance, but the idea certainly doesn't appeal to me in any way.
RTS and TBS. Love the concepts, but absolutely have sucked at them. I still try from time to time. I still want to love XCom like my brother does, but never took the time to learn to play it.
RPGs. Love the idea. Suck at them. Too much time involvement. Fallout 3 being the exception. And the Stalker games are excellent, if they count.
Sports games. I hate sports in general, except baseball and boxing. I suppose I should really try a good baseball sim someday. I bought MLB 09 The Show a while back, but haven't even opened it.
Hunting games. Defenseless animals? Where's the satisfaction in that? Stick defenseless humans in there, and I'm all for it. Carmageddon was great for that, but had no guns.
FPS where you can't jump, crouch, or lean.
