As someone who has never really played Starcraft, would it be worth grabbing the Starcraft Battlechest just to experience the singleplayer story? I have no interest whatsoever of playing online.

Definitely.  The story in Starcraft is one of the best things about it, even if the CGI is no longer impressive today.  I loved Starcraft 1 and 2 and never played either online.

Another option is to look for a youtube storyline summary.  I watched a Diablo one in preparation for Diablo 3 that included both cutscenes and important in-game moments.

That said, there are choices in WoL that affect the story in SC2, I'm not sure how much, I think it might be minor, but still interesting.
