Panini ideas (grilled sandwiches)

Living on fast and frozen food for the last week has pushed me over the edge. So today I went bought a George Formen Grill since its real easy to use in a hotel room.

Now I need simple ideas to make some sandwiches that don't require a knife to cut anything (don't feel like spending more money and that would give me more to wash).

I am doing a prosciutto, roasted red pepper, provolone, and basil panini right now. Problem is everything is so stong tasting its easy to over power the taste of the prosciutto.

So give me some simple ideas please.

If you like reubens, maybe you can make a reuben panini?  All you would need is rye, corned beef, sauerkraut and mustard. . . seems simple :-)
