Kinda of hard to explain, but Kill Bill is not your typical movie and the fight scenes are not meant to be "high quality" in a sense.

Go see Kill Bill Vol.1   If you loved the 70s and 80s Kung Fu and Samarai flicks you will understand why Ouentin  Tarantino shoot his fight scenes like he did.   The House of Blue Tea Leaves is a awesome scene to this
