but still frozen in the middle but soupy around the edges still taste good if it is refrozen?

Not usually.  Condensation from the air causes the melted surface to refreeze as ice crystals, giving it a watered down and often "freezer-burned" taste.

You'll get the best results if you eat the entire container of ice cream as soon as quickly as possible as soon as you open the container.  And I'll get the best results if you film it and upload the footage to YouTube.

This is true, but many times if you scrape the top layer off, it is still good.

Sometimes we get ice cream from the freezer that is so frozen we put it in the microwave for a few seconds to soften it up.
Never noticed anything unusual about the refrozen ice cream afterwards but there probably is some kind of change.
