My wife and father-in-law want to deep fat fry a prime rib tonight and are also debating throwing in some potatos into the fryer. My google-fu is weak and revealing nothing on this subject, except for recipes for deep-fried sweet potatos and french fries.

If you can deep fry Twinkies and candy bars, a potato should be no problem!  

OK, I really have no idea about deep frying stuff, but I would say that if you microwave it for a few minutes before dunking it, it should be tender and fully cooked.

I'm just concerned about the risk for explosion, as I can't find information on other folks deep frying whole potatos.

Id use the old microwave trick and use a fork to punch a few holes in it first.

We deep fry small whole potatoes about the size of half dollars all the time.  Never tried it with anything bigger but the biggest thing to be aware of is when you break one of them open its going to be unbelievably hot.  I wouldn’t worry too much about it.
