Admiral Kirk, Admiral Janeway, Admiral Archer, whatever Sisko... unless it was mentioned in All Good Things.

Solo was more of a privateer than a real "captain"/leader of men in my opinion. In Return of the Jedi, he did become a leader of men, but as a general.
If the decision is based solely on who would you want to be your captain as you prepare for battle, I would change my answer from Mal to Picard. Even though he lost his share of red shirts, he appeared to make well considered decisions as opposed to being a cowboy.

For those of you who never read an Honor Harrington book you should. There is no captain listed that holds a candle to her in terms of being a real ship captain. I never have figured out how Weber captured the essence of a great ship captain so well never having served on a ship but he did.
