If you look at the list, it looks like they put games on there that are all expected to launch with the system.

With the ridiculously high prices of the X360 (even the $700 EB games bundle) I'm just ognna stick it out with my PS2 and Xbox for another year.  See if the price goes down to $500 lol.  Also, do the stores generally stop selling the outrageous bundles after the Holiday Season?

The insane bundles generally are just for online orders only. To my understanding, if you walked into your local EB or Gamestop when they were still taking preorders, you could just order the plain console and nothing more.

That's what happened to me at my local Gamestop, at least.

Yup, the managers at my local EBGames and Gamestop both said that the bundles are for online orders only - you can pick and choose what you want for the instore orders.

bundles should only be made if they gave you some incentive to buy them, like 10% off per game, or a free official controller or something. Make it worth our time. Sad thing is, someone will order those bundles of hate and wanton consumer bullying.
