I've played all the biggies (Ratchet, Jak, Sly, PoP, Mario (well, I gave up on that one)), but this is my favorite genre. Is there a hidden gem out there waiting for me? I Ninja? Legend of Kay? Ruff Trigger?

Haven't played them (yet) but both Voodoo Vince (Xbox) and Sphynx and the Cursed Mummy (Multi) get lots of praise.

I have heard a lot of good about that one - it seems the only bad thing people have to say about it is that it doesn't have voice acting. How about Rayman 2? I have the PSX version but I really haven't played it and I know there is a prettier version for the PS2.

Sphynx, Voodoo Vince, and I-Ninja were all fun. For some reason Conker didn't compell me to finish it, but other people seem to like it. I even played a couple of the Ty the Tasmanian Tiger ones and they were pretty good for knock-offs.

Ape Escape 2 and 3 are a lot of fun. I-Ninja wasn't bad, but wasn't really anything special, IMO. I'm having fun with Crash : Twinsanity, and The Hobbit is a fun action/platformer that can be had for $5.

How about Rayman 2? I have the PSX version but I really haven't played it and I know there is a prettier version for the PS2.
Rayman 2 is simply one of the best platforming games made. It just oozes with style and humor and the level design is brilliant. It's creator went on to make Beyond Good & Evil which I also loved but Rayman 2 is just much more fun in every way. Here's Gamespot's entry on why Rayman 2 is one of the greatest games of all time.

I never said I hated it - I merely said skip it.
It's cheesy. I don't like the way it plays and I don't like the way it looks.
I found Sphinx and the Cursed Mummy to be more artistically pleasing, enjoyable to play and more comedic.

I'm not a big fan of Psychonauts, either. The art style is unique, but I personally found it rather unpleasant-looking. There's a foundation for a great game there, with interesting characters and stories, but for me, it never gelled into a compelling experience.

i'm in the middle of Psychonauts right now and am enjoying it a lot...solid gameplay and some funny writing make it a win for me so far. i've also played about halfway through the xbox version of Sphinx & the Cursed Mummy (on my 360) and it's a lot of fun. the lack of voice acting is a little annoying, but it's still a good game and one that i do plan on finishing if i can ever get my 360 backlog cleared out between new releases...

I have played Psychonauts and definitely liked it (except for the frustrating ending parts). Last night I got on eBay and picked up Klonoa 2 and Sphinx and the Cursed Mummy. I am looking into a copy of Rayman 2 as well.

I rented Psychonauts from Gamefly due to the mostly positive word of mouth here, and became a speaker for it myself. Very fun game for me; just liked most everything about it (though the bull caused me no end of trouble, and the end was a near Buffy level of difficulty).

Pitfall: The Lost Expedition is a good 3d platformer that was available for the XBox, GC and PS2. But note that I use the term 'good' and not the terms 'very good' or 'excellent'. It's worthy of your time if you can find it for cheap and have already played some of the better suggestions here; psychonauts, Voodo Vince, etc.
I have the XBox version and was about to trade it in but my daughter put up quite a protest. So if a platformer that's suitable for a younger crowd is a consideration, then Pitfall seems to have some appeal.
