Gamepro has an interview with Nolan North (found here):

Part of what he says is:

I don't see how they could have such a quick turnaround.  Maybe just do the voicework in 2010 for a 2011 release?  Either way, bring on more Drake!

That's my guess.  The degree of effort that ND puts into the cutscenes certainly requires that it be done relatively early.

Don't get your hopes up. It's not like the actors can just walk into the studio and record voiceovers for a few days and be done, like in other games. First they have to do casting, which is an involved process in this instance since Nolan North takes an active part in it. Then they have to record the cutscenes early enough in the process that the artists will have time to work with them. The basic movement that is recorded is only part of the process. Scenery has to be created, facial animations are manually created by the artists based on video recordings of the actors, etc. And then there's the voiceovers and recording movement for the characters during actual gameplay.

Nolan North will probably do a lot of stuff with Uncharted 3 this year, but we won't. I would be surprised to see the game before summer 2011.
