Why do they love to make these end bosses impossible to beat? What's the point of playing if the boss has unblockable moves that happen instantly? I know the counters, but they just don't work against Seth. And I don't see why this is a trend in games. WTF?

You're playing a genre that really hasn't progressed at all. It's a very "hardcore" mentality type of game. These games also use pretty outdated control schemes that rely on dpad style presses instead of thumbsticks and such. So it's no surprise they put in bosses that are only meant for the hardest of the hardcore. These bosses are meant to be bragging rights, basically rights of passage as opposed to the culmination of a story.
Fighting games are still fun to me, but I skip most of them due to this. Someday, someone needs to make a fighting game that meld's Fight Night Round 3/4's tactics and brawling gameplay with the outlandish moves and characters from the various fighting games from capcom/snk/etc.

I think I might trade in SF4 for the new UFC game. That is a fighting game that seems a lot more realistic, and I appreciate that.

Just to check, are you just trying to beat Seth to get character unlocks? If so, don't forget there are several difficulties easier than 'easy.' Normal > Easy > Easier > Easiest.
If you're not just going for unlocks, any reason you're not playing online? The single player AI in general is pretty horrible and it cheats a lot.

I don't find Seth to be all that hard. You just have to keep on him and don't let up. Generally he will throw a low punch to begin with so as soon as the fight starts jump towards him and pull of a combo. Then from there don't let up, works for me 90% of the time.

Try using Sagat, his combos and powers are the easiest to use IMO. If you can't pull of his knee or uppercut try using the D-pad instead of the analog stick or vice versa.
