I seem to be misunderstanding something. The game says to use defend to prevent being interrupted. So on turn 1 I defend and get the bubble around me. On turn 2 I choose to attack. I still have the bubble around me and an enemy hits me but I'm still interrupted. What am I doing wrong?

Defend only protects you for that turn, it basically lowers damage you will take and speeds your next turn up, allowing you to avoid one interrupt and get back into attack stance sooner.  The only time you should really use defend is if the enemy gets into their attack zone right before you get yours.  Otherwise it is almost always better to attack and try to disrupt their attack.

Later on you will get access to abilities that will prevent you from being disrupted for multiple turns.
