Red Dead Completion Question

I'm currently burning through Read Dead Redemption's main quest. When I "finish the game" will I be able to then take my same character around the world and complete all of the side quests and unlock the outfits? Or do I need to do that before I complete the last story mission?

You can complete everything after you beat the main story missions, so don't worry about missing out on any side quests or content.
However... there is one part of your statement that will not be the case, but it is a MAJOR spoiler so I won't say what.

there is only one stranger quest that you need to do before the end..otherwise you miss out on it
the quest is 'I Know You' which i think is in 3 parts
