I'm not sure about Component, but the 1st-party S-Video for the old PS2 fits the new PS2.

The video cables work. They are the same as the same connecion as the old one

Yep, I just bought the Sony Component cable, and it fit in my new PSTwo. (and looks great, too)

I had a hard time finding them too, and finally found them at Circuit City for $24.99. I ordered online, and did the in-store pickup option.

I see on ebay there are 3rd party component cables for the PS2
going for a couple of bucks + shipping.
Is there a huge difference between these and the "official" sony cables?
Also, if I were to buy a set of these 3rd party cables for my PS2, would they work with my Xbox also?

Some do, if they have the XBOX connector.  In general though, I have found that 3rd party connectors have really poor quality parts and are not as good as 1st party parts.  There are exceptions with companies like Monster, but those are rare.  Basically, if you are paying a lot less for a part than the 1st party is selling it, expect lower quality.

I'll testify to the third-party lower quality thing.  I bought a MadCatz component cable that is usable for both XBox and PS2 for $10.  After hooking it up, images looked OK, but seemed like they should look better.  It made things look a little jaggy, especially words on-screen.   I shelled out the $20 for the official XBox component pack and the picture quality improved by a noticeable amount with no more of the rough edges.  I say get the offical stuff.
