I just upgraded my plasma to a new LCD this week and I'm getting very noticeable and game changing controller lag. Happening with both the 360 and ps3.

Most modern televisions have several options intended to reduce input lag while gaming.  Check to see if you have the option to assign "Game Mode" to an input -- this typically bypasses any special video processing performed by the TV in order to improve response time.

Failing that, you can try manually disabling those features yourself.  Things like motion smoothing, edge enhancement, and visual noise reducers all tend to add to input lag...and often make your games look worse in the process.
