As per the title, I'm wondering if Dreamfall, just released on Xbox1, can be played on the 360?

No.  Basically, new titles won't be able to automatically work- they all will require some form of update from MS and, so far, MS seems intent on doing the updates in batches vice case by case.  So, *if* Dreamfall is ever compatible it won't be until a major update and who knows when that might happen.

Yeah, they're missing my money until they make it compatible, too.

I wish MS would let the game companies work on making the games compatible with the 360.  It seems like they could use the help, and the companies would no doubt love releasing a game that's good for more than just the "dying" system.

That's like blaming owls because I suck at making analogies.
