I think this is in the option menu or setup util.

I found that (for at least BG1, so likely the others) you can add a line to the Baldur.ini file.  Under the [Program Options] add the following:

Full Screen=0

Since it's the same engine I assume this will work for the others as well.

Hope that works.  Otherwise, you can alt-tab maybe, or even change the options in the shortcut to run it windowed.

Alt-enter should do the trick as well. And yes, most of them have a fullscreen vs. windowed setting in their config interface.

PST might be an exception, I can't recall.

Torment can be played in a window, though I think I edited the shortcut to do it.
