I had one when they first came out, sold it after I got sick of it and made a profit. My gf has been wanting one for awhile, so we picked one up today (Monster Hunter was the driving factor for me). Shes into the Mario and resort type games, I want Zelda, Monster Hunter and games like that (single player type). Any other ones you guys recommend, I would appreciate it. I haven't been following the Wii, so I have no idea whats out. Since I trust the collective opinion, I figured I'd ask here instead of doing my own research (I'm just lazy).

Based on your preferences, I think you'll find Super Mario Galaxy, New Super Mario Bros. Wii, and Zelda: Twilight Princess to be excellent choices. I particularly recommend the last one: Twilight Princess successfully replaced Majora's Mask as my favorite game in the Zelda series. You might also enjoy Okami - a Zelda-like game steeped in Japanese mythology, about a revived wolf goddess who can change reality by painting different changes. -Autistic Angel

If you haven't played Animal Crossing on the DS, you absolutely need to play it on the Wii. Super Mario Galaxy was awesome. I personally loved No More Heroes (only played the first since I sold my Wii before the 2nd came out). In fact, I loved NMH 1 so much I'm waiting for my shipment of the PS3 HD import version of it.
I was let down by Super Smash Bros Brawl; I really liked Melee on the GC a lot more.

My personal favorite games on the Wii are the lightgun shooter types. The genre has made a total 180 simply because they work so well on the Wii (as far as the controller goes anyway - the console's lack of power is nothing to sneeze at).

You mean like the new Dead Space game? A good start, yeah. Then there's a set of Resident Evil games, House of the Dead (including the extremely campy but ton of fun Overkill), quite a few arcade ports (Ghost Squad), and more ports coming soon (LA Machinegunners and Gunblade NY).

You may have to search for it, but owning a Wii and not having Metroid Prime Trilogy is just wrong.

Deadly Creatures was a lot of fun and can be had cheap now too
De Blob is another action/platformer/puzzle style game
I enjoyed both Excite Truck and Excite Bots for arcade style racing
Madworld is short but sweet
PunchOut! is a must own, it's not the longest game around, but you will come back to it for the challenges and for the simple yet perfectly balanced system.
Boom Blox and its sequel will be good for both SP and MP with your GF
I really liked Final Fantasy Fables: Chocobos Dungeon - Rogue-like game if that's your thing.
Let's See What else. . .

Dead Space
Both the Resident Evil lightgun games

Mario Galaxy
Boy and His Blob

If you haven't played the Metroid Prime series, the bundled version can be had cheap, and that's 3 good games.
I hope you can find some stuff from all of that. Despite popular opinion there is a lot of great gaming to be had on the Wii, and you should be able to find something or quite a few somethings.

If you like baseball and/or sports games then check out Power Pro Baseball. Fantastic game. I believe there are two but I only played the first one. Just get a gamecube controller for it as it's wonky on the wii remote.
