So I'm gonna be visiting family and hanging out with my cousin for a week or so. I was thinking a good way to kill some time would be a good fun RPG or action/RPG type game for us to play together. Between us, we have an X-Box, PS2, and a Gamecube. So what are your suggestions? BTW, I don't have, and don't feel like getting, the GC-GBA connection cords. So no Final Fantasy: Crystal Chronicles or that Zelda game. And I've played the Dark Alliance games, wasn't very impressed. So any suggestions out there?

That's a tough one.
I know Culdcept is really good (PS2), but I'm not sure if that can be played co-op. There is also a DS FF:CC game coming out (so no cords), but that's obviously not going to be released in time for you.

this ones easy - my personal favorites are the baldurs gate dark alliance (both are really fun, 2 is easier to use multiple powers)
xmen legends is lacking something in my opinion, in the skill set / powers department, but really fun none the less
i would avoid the fallout game its pretty generic and terrible

Yeah the Baldur's Gate Dark Alliance games are fun but you said you weren't very impressed. Some other options would be Champions of Norrath and the X-Men Legends/Marvel Ultimate Alliance series.

What didn't you like about the Dark Alliance games? Most co-op action RPGs are similar to those games. There's also Tales of Symphonia for Gamecube. It lets both players fight in battles, but there's lots of exploration and dialogue, so it probably doesn't lend itself as well to being played co-op.

Buy a SNES on ebay and play Secret of Mana co-op. It'll be worth the effort!

You can pick up the Hunter: The Reckoning games for the PS2 and Xbox for real cheap now. It's a rather cool setting that is different from the typical fantasy stuff.
You might want to try Justice League Heroes, as that is a two-player co-op game.
While it's not necessary an RPG, the Lego Star Wars games do have two-player co-op.
Another non-RPG game but very fun co-op game is Mortal Kombat: Shaolin Monks.
If you are into classic gaming, then any of the Midway or Capcom collections would be a fun blast from the past.

They really need to make more games like Hunter the Reckoning. That game had just the right amount of crazy shoot em up, but still enough tactics and good pacing to keep it interesting. The latest game of the type is Monster Madness and that was a pretty poor game overall.
I would so love to see them make a Devil May Cry, Heavenly Sword, or God of War style game co-op too.

+1 for Tales of Symphonia, X-Men Legends series and Marvel Ultimate Alliance. If you and your relatives like JRPG's at all, ToS is IMHO a must play game especially in co-op mode.
[Edit] OMFG I forgot about The Lord of the Rings; Return of the King. That game is an absolute blast in 2 player co-op.

Emphasizing the "ish" in RPGish, you could also consider Dynasty Warriors 4 which I believe has a co-op campaign.

Buy a SNES on ebay and play Secret of Mana co-op. It'll be worth the effort!
THIS is what I'm talking about. Ever since My buddy and I beat this forever ago, we've been looking forward to each of the sequels hoping for the same type of gameplay. Talk about disappointment.

Ditto that! Ever since the original Mana game (FFA on the GB) and Secret of Mana, every "Mana" game I've played has been a disappointment in the gameplay department.

There was a PS1 version of the original. I would love a DS or PSP remake.
